Since advised to eat a grain free, gluten free diet, it has not been difficult cooking meals, but it has been effortful. Many paleo (grain free) recipes substitute wheat flours with coconut flour, but my body has adverse reactions to coconut. After some searching, I have discovered almond flour, and it has been a blessing! I do not miss pasta or bread or cookies, but I do miss pancakes! I completely failed at making almond flour pancakes the other day only using one egg in the recipe. If you're baking with almond flour, you better have eggs handy! Turns out a cup of almond flour coupled with FOUR eggs will yield a pancake recipe. This morning I woke up, and I was determined to make waffles. This recipe did not disappoint. Enjoy these protein dense, fiber filled alternative waffles!
1 cup almond flour
1 teaspoon baking soda
pinch of salt
2 tablespoons honey
Preheat waffle iron
Mix wet and dry ingredients in separate bowls
Combine wet ingredients into dry ingredients and mix
**I realized very quickly that this waffle mix cooks MUCH quicker than regular batter. These guys were done within 30 seconds!
